Abstract:

The article is devoted to the development of an automate information system for calculations in the catering process. The necessity for automated system development is determined by the labor input and the calculations complexity as well as risk management to ensure the quality and safety offuture food rations. The structure of existing software "Computation System for Catering", version 5 as well as used reference data are presented. Additional modules developed within the present research (vitamins, minerals, fatty and amino acids calculation research) are described. The operating procedures and corresponding structural elements of the system are presented. The treelike structure of the recipe development used by the author for product (dish) modeling is described. An electronic database for catering (recipes, diet menu) were developed using a modified computer program. On its basis, the Technical Standards Collections (for preschool feeding, recreation centers and sanitary institutions for children) were composed. To provide control functions the “Quality Control” module was added to the program. The “Quality Control” module contains necessary laboratory test procedures with the correctability (adding, changing of the existing). The use of both printed research results and electronic databases (recipe formulations in the form of process cards, diet menus, technical standards collections) is proposed. The Technical Standards Collections and the computer program have passed through the appropriate examination and were recommended for the implementation in catering and the Russian Agency for Health and Consumer Rights. The research results were introduced in the existing pre-school, school organizations, recreation centers and sanitary institutions for children of the Russian Federation, as well as Federal State-Funded Healthcare Institution “Hygienic and Epidemiological Center in the Sverdlovsk region”.
