Kinetics Research of the Water-Soluble Component Extraction from the Crushed Watermelon Rind

Abstract:

Currently, a man uses synthetic polymer packaging materials for food products, which causes a permanent waste growth not subjected to biodegradation. This determines the development and production relevance of modern biodegradable food packaging from recycled renewable raw materials for various sectors of the food industry, which will reduce the negative impact on the global environment. The raw material for such packaging can be the pectin-rich food waste from the processing of table watermelon, or the berry itself, not harvested from agricultural fields, or not in demand on the market. In this regard, the study object was the crushed bark of watermelons as a non-recyclable part of its processing waste, as well as pectin extracts from it. On this basis the study purpose was to find rational values of the intensity and extraction process duration of water-soluble components from secondary watermelon raw materials. The kinetics of pectin substances extraction from crushed watermelon bark particles determines not only the speed or intensity of the process, but also the finished product quality, considering the influence of strict extraction modes while observing technological restrictions. In addition, kinetic patterns are most often nonlinear and have characteristic inflection points, so their analysis enables to assess the process effectiveness as a whole and its individual stages, as well as to identify and analyze the physico-chemical mechanism of its implementation. To determine the kinetic regularities, the researchers used refractometry method, characterized by accuracy and comparative speed of obtaining the result. As a result, they revealed the rational values of the extraction process intensity and duration of water-soluble components from watermelon bark. The determined specifics of the operation predetermines not only the mechanism of solvent saturation with recoverable substances, but also the evolution of the concentration front in the raw material.
