Development and Evaluation of Consumer Properties of the Whey Drink “Rostok”

Abstract:

The article presents the formation stages and evaluation results of consumer properties of the whey drink “Rostok”. At the first stage of the research, the survey method in the form of a questionnaire revealed consumer preferences when choosing fortified food. The researchers found that 76 % of consumers had a positive attitude to fortified dairy products, preferring fermented milk products (25 % of respondents). As a priority of the dressers the respondents named grain and products of its processing; 84 % of consumers expressed a positive evaluation to malted barley rootlets and their processed products. At the second stage of the research, the authors studied the range of whey drinks presented in the retail chain of Orel. They found that the range of whey drinks was represented by two major manufacturers – PLC “Wimm-Bill-Dann” (TM "Mazhitel") and PLC "Danon Russia" (TM "Actual"), that used fruit and vegetable juices as fortifiers; drinks of local producers was not used for this purpose. At the third stage of the research, a man developed a formulation and manufacturing technology, and evaluated the consumer properties of the Rostok drink. The recipe components of the drink are whey, hydrolysate of malted barley rootlets and concentrated apple juice. The study of organoleptic, physical and chemical and microbiological indicators of the quality of the drink "Rostok" and their changes during storage showed that the drink has sufficiently high organoleptic characteristics, the content of individual mineral elements and vitamins can be positioned as functional. The shelf life of the drink is 7 days.
