Integrated Approach to the Evaluation of the Beverages Quality with Gerontological Effect

Abstract:

In 2018 the proportion of Russians aged 60 and over was 25.4% of the country population. By 2050, this figure is to rise to 31.2 %. Allowing for the rapid population ageing the potential risk of “age-related diseases” will increase. There is a need to develop measures to promote health and to organize disease prevention through the nutrition regulation of the age group. In Russia, there is a steady trend of expanding the range of functional serum drinks of gerontological use. The authors developed recipes of drinks with enhanced flavor on the basis of milk curd whey, fruit, vegetable, berry juices, plant extracts with the addition of flavor composition containing yeast extract, natural flavor, curcumin in a bioavailable water-soluble form in the compound of stevioside-curcumin considering the reduction of olfactory taste sensitivity in the elderly. However, it is very difficult to assess the quality and safety of the developed beverages fully, because the regulations (GOST, SanPiN, technical regulations) contain only acceptable values of quality indicators that cannot fully characterize the object. To solve this problem researchers developed a comprehensive indicator of the whey beverages quality by constructing a qualimetric model using the structuring of the quality function by means of expert assessments, building in a hierarchical order and determining the weighting coefficients of quality indicators at each level. They built the hierarchical structure of quality indicators: zero level – generalized quality indicator; the first level – organoleptic indicators, nutritional value, functional properties, cost; the second level – appearance, color, taste, aroma, aftertaste, consistency, content of basic nutrients, energy value, antioxidant activity, content of curcumin; the third level –proteins, fats, carbohydrates content. The researchers defined generalized quality indicators of new whey drinks: a drink developed by authors K = 0,882-0,972, a drink developed by competitor K = 0,508. These indicators make it possible to assess the quality of drinks with one value, determine its competitiveness, compare and rank products within one product category.
