Developing a confectionery product containing pumpkin products rich in carotenoids for Arctic population

Abstract:
This article examines the principles of developing confectionery products fortified with carotenoid-containing products for nutritional purposes in harsh climates. The objective of the study was to develop confectionery products fortified with carotenoid-containing products to prevent vitamin A deficiency in the population. The authors substantiated the choice of pumpkin as a source of β-carotene and other biologically active substances that help strengthen the immune system and enhance the body's adaptive capacity. The technological features of integrating pumpkin puree into the recipe and its effect on the organoleptic and physicochemical properties of the resulting confectionery products are described. The results of an analysis of the nutritional value and biological activity of the developed products are presented, confirming their effectiveness in preventing vitamin deficiency and maintaining health in conditions of low temperatures and a limited range of fresh fruits and vegetables.
