Functional marmalade based on pumpkin puree and Siberian plant raw materials

Abstract:
As part of the state healthy nutrition policy, special attention is paid to the development of functional products that compensate for essential nutrient deficiencies and reduce the risk of chronic diseases. Fruit and vegetable-based marmalades offer high potential for enrichment with biologically active substances. Plants growing in Siberia thrive in the challenging climate of the extreme continental climate thanks to their adaptive properties, possessing increased levels of biologically active substances with strong antioxidant, anti-inflammatory, and immune-modulating properties. The objective of this study boils down to developing a recipe and manufacturing technology for a marmalade product enriched with biologically active substances with immune-correcting properties using local plant materials. This study proposed a new recipe for a functional marmalade product using local Siberian raw materials: pumpkin, cranberry, Siberian rowan, and bearberry. The resulting marmalade product is enriched with vitamins A (190 mkg), C (40.4 mg), and iron (2.8 mg), representing 21.1 %, 40.4 %, and 15.6 % of the daily value, respectively. The technology for producing functional marmalade products includes: preparing plant materials; making pumpkin puree; preparing and freeze-drying berries; grinding the freeze-dried berries to a powder; preparing the gelling agent (soaking and dissolving the gelatin); composing and mixing the recipe mixture; boiling down the marmalade mass; molding the marmalade; gelling; removing the product from the molds; polishing the surface; cooling and fixing the coating; quality control. Marmalade is promising for preventing micronutrient deficiencies and strengthening the immune system in Siberia and other Russian regions with vitamin and mineral deficiencies..
