The system of regulatory documentation and practical aspects of designing baby food products using mathematical modeling and artificial intelligence methods

Abstract:

This article analyzes current regulatory and technical documentation from the Russian Federation and the Eurasian Economic Union governing the design of food products and the formation of diets for preschool- and school-age children in organized groups. The authors identified hierarchical levels of the regulatory system: from legislative acts to specific technical regulations, sanitary rules, industrial standards, as well as methodological recommendations and recipe collections. The composition of each level of regulatory and technical documentation is disclosed, and examples of documents and their importance in food service organization are presented. Particular attention is given to the interdepartmental interaction of documents and their role in ensuring the nutritional adequacy and safety of prepared foods, cyclic menus, and the development of regional collections of technical standards. Based on practical work, the main deficiencies of the analyzed diets of operating organizations are described. A standard procedure for developing diets is presented, based on which it is proposed to use design principles to improve the quality of the prepared diets. An algorithm for developing a mathematical model for the calculations performed in spreadsheet format and the subsequent scheme for designing a diet are described. It is proposed to use the computer program «Calculation System for Public Catering», which contains all the necessary databases and has the required characteristics. A calculation of the optimal yield of breakfast dishes for children is presented; using the simplex method; deviations of no more than ±0.3 g of nutrients per meal were established. The described model for developing diets can be extended to special types of food.
