Integrating artificial intelligence technologies to assess vegetable quality in food industry and trading enterprises

Abstract:

The sustainable development of food industry enterprises in a context of increasing competition is inextricably linked to the development and implementation of digital solutions and innovative technologies. The need to integrate artificial intelligence technologies into agricultural product sorting processes at food industry enterprises stems from the need to increase the speed and accuracy of sorting processes. The objective of this research was to develop a model for automatic image analysis using artificial intelligence to assess the quality of vegetables (using pumpkin as an example) at food industry and retail enterprises. A dataset characterizing the condition of fresh pumpkins was used as the object of study. The model is based on convolutional neural networks (CNNs) using Conv2D, MaxPooling, and Dropout layers to extract image features and classify fruits into three categories. The model was developed using the TensorFlow and Keras frameworks for creating neural networks, Flask for the web interface, and NumPy, Pillow, and Matplotlib for data processing and visualization. The model was trained in Google Colab using a GPU, and tested and refined using Jupyter Notebook and Visual Studio Code. The Python programming language was used to implement a model for automatic pumpkin image analysis. The architecture of a digital product quality control system, a flowchart of the stages of developing a trainable model for automatic pumpkin image analysis, and the functionality of the developed model are presented. It was determined that the proposed model can be used for color classification: analyzing peel color to determine ripeness and identify problems related to disease or damage. The results of the study can be used to develop strategies for integrating artificial intelligence technologies into production systems at processing and food processing enterprises.
