Catering market in the Russian Federation: current state and development prospects

Abstract:

Modern life is full of changes caused by digitalization, acceleration of processes, and improvement of service quality for people. The catering industry, despite strict control by regulatory authorities, simple and basic nature of satisfaction of needs (production and consumption of ready-made food), is also subject to changes. On the one hand, the industry is dominated by high quality, expensive, unique offer in the form of restaurants, and on the other - fast and universal food in the form of canteens and fast food organizations. The objective of the study is to analyze the Russian catering market to understand the specifics of its development in the medium term, as well as to develop recommendations for companies taking into account current trends. The research methods included the analysis of Rosstat data, assessment of cases of development of catering industry organizations, and expert interviews. The study showed that the catering market has reached saturation, and individual innovations are emerging that develop the direction of providing food services. The coronavirus pandemic and self-isolation of people have had a strong impact on the market. The author notes a polarization of the catering market development into the segment of restaurants, which is focused on the uniqueness of dishes, and canteens that use semi-finished products to improve the quality of food services. The results obtained can be used to understand the prospects for market development within the FoodNet direction and the introduction of innovations that make it possible to improve the quality of food services and open new directions.
