The conducted researches confirm the relevance of the foodstuff production process with the given chemical composition and increased nutritional value in order to compensate mineral and vitamin shortage in the human diet of the population living in the Arctic and sub-Arctic conditions, engaged in the hard manual work as well as children, teenagers, women, elderly people. As a research result, the incidence rate is specified to be bound up the alimentary nutritive factors, first of all.
