The Formulation and the Trade Analysis of the Vitamin Sugarplams Based on the Seabuckthorn Oil

Abstract:

The article is devoted to the actual topic aimed at expanding the foodstuff assortment based on the seabuckthorn oil as a source of an essential polyunsaturated fatty acids (ω-3, ω-6 and ω-7), phospholipids and other biologically active substances and vitamins. The research objects were laboratory and production samples of the vitamin sugarplums developed on the LLC “Altaivitaminy” (Biysk). The following methods were used: organoleptic measures determination of the sugarplums samples by the visual examination, degustation and calculation; water content estimation of the sugarplums samples by the dehydration till the constant weight; total acidity by the tittering; Vitamin C amount by the iodate method tittering. As a result of the research the formulations of products based on the seabuckthorn oil concentrate were developed: vitamin sugarplums “Vitalife. Oblepishka”. The optimal raw materials ratio was found in order to achieve high organoleptic properties of sugarplums: granulated sugar – 82.63 gr per 100 gr, seabuckthorn oilseed meal – 7.84 gr per 100 gr, seabuckthorn oil concentrate – 2.24 gr per 100 gr, vitamin premix – 0.2 gr per 100 gr. Expiry date and conditions of the developed pan goods were determined: at chosen standard storage mode at the temperature 18±3 °С and the saturation ratio of 75 %. Tightly packed sugarplums can be kept during 12 months after the date of production. The regulated quality properties and the biologically active substances content that determines the functional properties of the produced sugarplums are taken as the main quality criteria. The results show that 20 sugarplums “Oblepishka” can satisfy 8.8% of vitamin C daily requirement. It allows recommending it as a general restorative for all categories of customers.
