Abstract:

The thesis has general and summarized character and concerns the technology prospects of the food production technologies for astronauts being in extreme conditions of the space. Its aim is to define the guidelines for the development of the astronauts feeding assortment and technologies. The author notes the requirement for the detailed assessment of the astronaut nutrient enrichment and the degree of conformance quality to the body needs at the different outer-space flight stages. The author specifies that foodstuff consumed by the astronauts is imposed particular requirements: enough expiring at 20 ± 5º C above zero; daily rate of the caloric value is 3000 ± 150 kcal (as a basis, the caloric value of the man aged 35 – 40 years and his average daily balance were taken: proteins – 12-15 %, fats – 30-35 %, carbohydrates – 50-55 %). An astronaut feeding consists of two parts. They are “regularly delivered products” and industrial production goods which passed tests of the object impact. At the same time an additional part of 1000 ± 150 kcal caloric value per day is formed according to the individual astronaut tastes. The thesis underlines that nowadays, the Russian foodstuff industry consists of rich science potential – technologies of the high-calorie foodstuff manufacture. The author has defined the extensive prospects of the sublimated products use. The need of the astronaut foodstuff diversification is emphasized. The author summarizes that the future food technologies will be based on the use of the space feeding closed to the organoleptic foodstuff characteristics utilized by a man on the Earth.
