Cutting Pattern Development of the Yakut Foal Breed Meat

The article presents the cutting pattern development results of the Yakut foal breed meat. Horses and foals of the Yakut breed have short stature, massiveness and differ significantly by measurements from other breeds. Therefore, the meat cutting pattern regulating by the GOST 32226-2013 “Meat. Horse and Foal Meat Cutting Pattern. Technical Specifications” is not applicable for the Yakut foal breed. Therefore, there is a necessaty to develop a special meat cutting pattern for the Yakut foal breed and to study morphological and chemical composition, organoleptic characteristics of the foal carcasses. Considering the modern requirements of the domestic and international markets, the increasing consumer demand for meat, including foal meat, the meat cutting pattern development of the Yakut foal breed available for domestic sale and catering of the Consumer Cooperatives Union “Kholbos” (CCU “Kholbos”) of the Republic of Sakha (Yakutia) is important and vital. The researchers determined carcass weight, morphological composition, mass and yield of individual cuts by measuring methods in accordance with the technology instructions requirements. They carried out the organoleptic research of the Yakut breed foal meat after maturation at a temperature of 0-4 °C for 48 hours. The article consists of the new cuts butchering scheme of the Yakut breed foals, as well as the names and the separation boundaries of the cuts from the foal. 12 cuts are provided, i.e. 4 from the front; 2 from the middle; 6 from the back. The authors analysed the microbiological indicators, chemical composition and energy value of meat for separate cuts, and fatty acid composition of foal meat. The article deals with the developed company standard “Meat. National Cutting of the Yakut Breed Foals on the Cuts” (STO 01710620-001-2012) approved by the CEO of the CCU “Kholbos” for retail trade and public catering of the Republic of Sakha (Yakutia)..
