Development of the Fish Semi-Finished Products for Baby Food

Abstract:

Daily diet, diet and baby food often include fish products. Basically, it is low-calorie, easily combined with vegetables, cereals, and is well absorbed by the human body. At the present production stage of semi-finished and culinary products from fish the improvement of its technologies aimed at food, biological value, and also safety increase of these products gained special importance. One of the promising directions of the nutritional value and organoleptic characteristics improvement of fish products is its enrichment with various fillers. The study resulted displays the combined use of milk and plant ingredients in the technology of fish semi-finished products. The article considers possibilities of using cottage cheese as a substitute for a part of fish raw materials (from 20 to 50%), and peeled buckwheat and lentil flour (1:1) for a complete replacement of wheat bread. The experimental samples were a subject of the organoleptic estimate; physical and chemical analysis methods. Plant components have a positive effect on the functional and technological properties of semi-finished products. It allows to increase the yield of finished products of advanced juiciness. A man can obtain products with high consumer characteristics on the basis of combined use of dairy component and plant ingredients in technology of fish semi-finished products for children. The optimal concentration of the milk component is 25% by weight of minced fish. The results of the nutritional value calculation of semi-finished products showed a high level of mineral content in the developed products.
