Convenience Minced Meat Quality Management on the Basis of the Qualimetric Forecasting

Abstract:

The article reveals the quality management specifics of minced meat part-cooked products using the qualimetric forecast model. In modern conditions, producers need not only to meet the regulatory and technical documentation requirements, but also to be able to develop conceptual ideas and solutions based on the consumer wishes, as well as to anticipate and respond quickly to changes in their requirements for product quality to ensure the competitiveness of its products. As quality and safety issues for the meat industry remain relevant, and consumer interest in the goods and services quality and safety has increased incredibly, food producers seeking to be competitive are to meet the international food safety standards strictly. The qualimetric forecast methodology aim is to ensure a high quality and competitiveness level of the new product. Authors revealed the qualimetric quality estimation formula for minced meat part-cooked products and developed the consumer requirements matrix allowing to predict an increase in quality indicators of meat production. A man uses the qualimetric forecast methodology to determine the most important changes in consumer requirements for product quality and ensure both its high competitiveness and customer satisfaction with product quality.
