Kinetics Study and Consistent Pattern Analysis of the Rod Production Process from the Fish Mince

Abstract:

The article concerns separate aspects of the kinetics and analysis study of the molding process of rod from fish minced mixture in the technology of frozen semi-finished products. The wider use of molding process of fish products in industrial conditions cause the issue relevancy. It lets to realize optimal fish raw materials more rational in comparison to sale round cooled or frozen fish. The study results of simultaneous processes of rod molding and freezing allow to implement developed original intensive methods of raw materials preparation (beating, mixing, molding), and related to it freezing method not only for raw materials processing, but also for the production of semi-finished products, culinary products and canned food in compliance with environmental safety conditions and cost reduction of cold food processing. The research results are necessary for the scientific analysis of kinetics and dynamics of heat and mass transfer processes, its modeling and optimization for energy saving in the processing and storage of food materials.
