Usage of the Flake Ice from Electroactivated Water During Cooled Fish Storage

Abstract:

The article presents the study results of influencing flake ice from electroactive water with pH 3.2 on the food shelf life, particularly fish products – cooled carp. After 15 days of storage, the control samples had a dim surface covered with muddy mucus, that testified to fish spoilage. While studying organoleptic characteristics of cooled fish samples of the experimental group under storage conditions in electroactive water, authors found that after 20 days of storage the cooled carp met the requirements of GOST 814-96 “Cooled Fish. Technical conditions”. After 20 days of storage, the experimental samples of cooled carp according to microbiological indicators corresponded to the reference level according to TR EAEU 040/2016 “On the safety of fish and fish products”, while in the carp samples of the control group QMA&OAMO was 3.0∙105 CFU per gr at a rate of not more than 5.0∙104 CFU per gram. The amount of protein in the control samples of carp after 20 days of storage was 13.3 %, which is lower by 22.6 % (p ≤ 0.01) than after 10 days of storage. In the experimental samples of carp muscle tissue, the amount of protein after 20 days of storage was at the level of 17.0%, while there was no significant reduction in the storage process. During storage the content of amine-ammonia nitrogen significantly increases in the control samples of carp. The acid number of lipids rises in both control and experimental samples of carp, which indicates a growth in the amount of free fatty acids, the decay of protein-lipid complexes and increased oxidative processes. Lipid destruction occurs more intensively in the control samples of cooled carp. Thus, the use of electroactive water with pH 3.2 for the flake ice production later used as a cooling medium for the storage of cooled fish products – carp, can increase the shelf life of fish from 12 to 15 days, i.e. by 25 %.
