Development Aspects of the Food Concentrate Industry in the Russian Federation

Abstract:

The author considers the latest achievements of domestic scientists in the field of food development, i.e. grain basis baby food, food concentrates, coffee, and tea, as well as special food for the Russian crew of the International Space Stations (ISS). The modern research conducted by the scientists of the Institute of the Food Concentrate and Special Food Technology Science – The subdivision of the Federal Research Centre for Nutrition and Biotechnology takes into account the main consumers requirement to the food – its safety. The article summarizes the risk analysis results and critical control points based on the core principles of the HACCP system currently used to ensure the quality and food safety. The risk analysis was to assess the probability of occurrence and the severity of its consequences. The enterprises of the food concentrates industry characterized by the huge output product assortment, manufacture fast food, desserts, infant and dietary food, breakfast cereals, coffee, coffee products and tea. Nowadays a man classified it as a separate, relatively large commercial products group. There is a fundamental level of scientific research and high production technologies in the modern food-concentrate industry.
