Quality and Safety Maintenance of the Raw Materials for Diary Products

Abstract:

Nowadays, the quality and safety issues of raw milk as the main raw material for dairy products have become particularly relevant in the domestic dairy industry. The article considers the design specifics of the quality management system on the example of the Agricultural producers' cooperative (APC) “Kalininskiy” (Sverdlovsk region). The author introduced the plan of measures to develop a quality management system on the HACCP
principles and a set of essential documents: technological scheme of raw milk production; 
a list of HACCP; HACCP group report on critical points and remedial measures. The research was conducted within the framework of R&D T-2/2017 “Documentation development of quality management system and enterprise safety on the HACCP principles”. The developed documents of the quality management system and safety of raw milk
production on the HACCP principles play a crucial methodological and practical role in the activities of agricultural raw milk producers, particularly to meet the requirements of the Technical Regulations of the Customs Union № 033/2013 “On the milk and dairy products safety”.
