Aqueous Extracts Antioxidant Activity Determination of Some Plants from the Ural Region

Abstract:

A man often uses aqueous extracts of plants in pharmaceutical, cosmetic and food industries. As a result, the study determined plants antioxidant activity (AOA) of the Ural region: sea buckthorn, raspberry, nettle, dogberry, red and black currant. Researchers calculated the AOA by the potentiometric method using the mediator system K3[Fe(CN)6]/
K4[Fe(CN)6]. The AOA value is proportional to the extra active substances output. Within the analyzed temperature range (60-100 °C), the determined AOA value for different plants varies in different directions while the extraction temperature is increasing. Among the studied samples, extracts from sea buckthorn and raspberry leaves have the
maximum AOA, and extract from nettle leaves get the minimum. Freshly prepared extracts contain the maximum number of antioxidants.
