Technology Development of the Phospholipide and Mineral Vegetational Complex

Abstract:

The article considers the urgent issues of expanding the functional food products assortment based on the use of plant rapeseed lecithin within the phospholipid and mineral vegetational complex.

The authors studied the physical and chemical parameters of rapeseed lecithin obtained from the local plant raw materials, established the phospholipids group composition, and theorized a technological regimen for the non-fat lecithin production. The researchers run a comparative technological properties analysis of the rapeseed lecithin obtained from the local plant raw materials and raw materials of other domestic producers, and revealed regulatory compliance with the requirements. They also revealed more significant amount of phosphatidylcholine, phosphatidylethanolamine and the sum of phosphatidylserine and sphingomyelin, that increased its physiological and technological properties. The article shows the prospects of using rapeseed lecithin in the design of functional food products.

The authors developed a technology for the use of rapeseed lecithin in the phospholipid and mineral vegetational complex production based on the powder currant berries concentrates and swamp saber rhizomes, calcium chloride and succinic acid solution. They studied chemical composition of biologically active compounds of the plant raw material concentrates and determined on its basis the quantitative ratios of the ingredients in accordance with the daily intake norms with a single use of 10-15 g in the product.

The researchers offered technology for obtaining a phospholipid and mineral vegetational complex, studied organoleptic and physical and chemical indicators of the complex. There is an offer to use a phospholipid and mineral vegetational complex based on the chemical composition of nutrients in the production of bakery and meat products with antioxidant and immunomodulation properties.
