Current Conditions and Development Priorities of the Fruit And Vegetables and Processing Industry

Abstract:

In recent years the share of fruits and vegetables imported to the Russian market has significantly decreased. Scientists noted the lack of fruits and vegetables both fresh and processed (111 and 61 kg against standard 140 and 100 kg respectively) in the modern man diet. The project "Development Strategy of the Food and Processing Industry of the Novosibirsk region for the Period until 2025" states that the development of the local fruit and vegetable industry requires the development of raw material zones, improvement of the fruits and vegetables procurement set up, technical re-equipment of enterprises, advanced technologies introduction that expand the competitive products range. The scientists of the Siberian Scientific Research Technological Institute of Agriproduct Processing of the Federal Center for Agrobiotechnology of the Russian Academy of Sciences have developed new types of prepared food and foodstuff of general and specialized purposes from local raw materials using the method of hydro-mechanical dispersion within the framework of the project above.
