Expectation Model of Biomembrane Technology of the New Generation Dairy Products in the Market Economy and WTO Membership Reality

Abstract:

 

The article concerns theoretical and practical aspects of the principle implementation of milk processing and functional dairy products production in a closed technological cycle based on the managed raw milk separation to natural casein concentrate (NCC) and serum polysaccharide fraction (SPF) by the biopolymer of directional action (e.g., pectin). The researchers proposed principal biomembrane technology diagram of the milk components separation in the format of “objectives tree”. They found that using “Bio-Tone” technology in the processing increased milk production by 30–60 %, profit by 30–40 %, and reduced the one ton of a product cost by 25–30 %. The difference between these dairy products and the traditional one consists in the increased content of milk whey fraction by 25–30% and the use of casein calcium and phosphate complex instead of casein. The research proved that the products obtained with the use of “Bio-Tone” technology significantly increased the nonspecific resistance of the human body (cell membranes stabilization, activation of an antioxidant protection). The studies resulted in a generated predictive biomembrane technology model of the new generation food industry for the possible modernization of the dairy industry in terms of the coming (sixth) technological mode.
