Modern Approaches to the Recipe and Technology Modeling of the National Russian Drinks

Abstract:

 

The article considers the modern approaches to the modeling of soft National Russian drink “Sbiten” with antioxidant properties based on local vegetable, fruit and berry raw materials. Authors applied the standard methods of physico-chemical and microbiological studies for analysis. One compares characteristics of the Ural region vegetable raw
materials containing high antioxidant activity with its physiological action and indicators of the regulatory documents. The commodity research and hygienic assessment of the plant raw materials results are presented. The researchers obtained data on the plant raw materials biological value based on the analysis of the essential amino acids presence.
They announced the ingredient matching matrix for the sbiten marked “Lesnaya Skazka” that formed with the descriptive, specialized and scoring methods use of the tasting analysis. The authors presented the developed sbiten flavor profiles indicating  the major descriptors. One revealed that drinks with optimal organoleptic characteristics as well as relevant consumers expectations were beverages containing:

1) honey, water, infusion of dried apples, rowan, briar, extracts of peppermint, big-sting nettle, bearberry;

2) honey, water, infusion of dried apples, rowan, briar, extracts of thyme, oregano, milfoil and raspberry leaf. Authors introduced the flow chart indicating the major production stages of sbiten marked “Lesnaya Skazka”; analyzed dynamics of the sbiten quality indexes during their storage; gave the regulated indicators.
